The Czech Smoked Špekáčky recipe was bought over from our friend Miroslav Panuska who worked with us for 6 months during his working holiday in NZ. After a test batch for us at home to roast on sticks over the fire, we thought it would be a great addition to our range of sausages. A different flavour profile from the German style of sausages the Czech sausage making tradition was impacted by their time under the USSR making sourcing some spices difficult. The crafty Czechs didn’t let that stop them from creating this beautiful and by now very traditional staple.
